Ingredients
1 cup jasmine rice, rinsed
8 cups chicken or vegetable broth
1/2 lb ground pork
2 tbsp soy sauce
1 tbsp fish sauce
1 tsp sugar
1/4 tsp white pepper
2 cloves garlic, minced
1 tbsp vegetable oil
1-inch piece ginger, julienned
2 green onions, sliced
2 tbsp chopped cilantro
1 tbsp fried garlic (optional)
2 soft-boiled eggs (optional)
Instructions
In a large pot, combine rinsed rice and broth. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 20-25 minutes until rice is very soft and porridge-like.
While rice cooks, mix ground pork with soy sauce, fish sauce, sugar, white pepper, and minced garlic. Let marinate for 10 minutes.
Heat vegetable oil in a skillet over medium-high heat. Add the pork mixture and cook, breaking it up, until browned and cooked through, about 5 minutes.
Stir the cooked pork into the porridge. Taste and adjust seasoning with additional fish sauce or white pepper if desired.
Ladle porridge into bowls. Top with julienned ginger, green onions, cilantro, fried garlic, and a soft-boiled egg if using. Serve hot.
Tips
Adjust consistency by adding more broth or water if porridge becomes too thick.
Fried garlic can be made by frying sliced garlic in oil until golden; store in an airtight container.
Leftover porridge can be refrigerated for up to 3 days; thin with broth when reheating.
