This is the concentrated base for authentic Thai iced tea, made by steeping Thai tea mix with spices and sweetened with sugar. It's strong and sweet, meant to be poured over ice and topped with evaporated milk.

Ingredients
1 cup Thai tea mix (e.g., Pantai or Number One brand)
4 cups water
1 cup granulated sugar
1/4 teaspoon vanilla extract (optional)
Instructions
Bring 4 cups of water to a boil in a saucepan.
Add the Thai tea mix, stir, and remove from heat. Let steep for 5 minutes.
Strain the tea through a fine-mesh sieve or cheesecloth into a heatproof pitcher or bowl. Discard the leaves.
While the tea is still hot, stir in the sugar until fully dissolved. Add vanilla extract if using.
Let the concentrate cool to room temperature, then refrigerate until cold.
Tips
Serve by filling a glass with ice, pouring the concentrate to about 2/3 full, then topping with evaporated milk or sweetened condensed milk.
The concentrate can be stored in the refrigerator for up to 1 week.
