Ingredients
3 lbs beef chuck, cut into 1/2-inch cubes
2 tbsp vegetable oil
1 large onion, chopped
6 cloves garlic, minced
3 tbsp chili powder
1 tbsp ground cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
2 cups beef broth
1 can (14.5 oz) diced tomatoes, undrained
2 tbsp tomato paste
1 tbsp masa harina (optional, for thickening)
Salt and black pepper to taste
Instructions
Heat oil in a large Dutch oven over medium-high heat. Brown beef in batches, about 4 minutes per batch. Transfer to a plate.
Reduce heat to medium. Add onion and cook until softened, about 5 minutes. Add garlic, chili powder, cumin, oregano, and cayenne; cook 1 minute.
Return beef to pot. Stir in broth, tomatoes, and tomato paste. Bring to a boil, then reduce heat to low. Cover and simmer 1.5 hours, stirring occasionally.
Uncover and simmer 30 minutes more, until beef is tender and chili thickens. If desired, mix masa harina with 2 tablespoons water, stir into chili, and cook 5 minutes.
Season with salt and pepper to taste. Serve hot.
Tips
Adjust cayenne to your heat preference.
Chili tastes even better the next day.
Top with shredded cheddar, diced onion, or sour cream if desired.
