1 lb ground beef
1 tbsp vegetable oil
1 medium onion, diced
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
1/2 cup water
1 can (15 oz) refried beans
1 cup cooked rice
1 cup shredded cheddar cheese
4 large flour tortillas (10-inch)
1/2 cup sour cream
1/2 cup salsa
1 avocado, sliced (optional)
Instructions
Heat oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat.
Add onion and garlic to the skillet; cook until softened, about 3 minutes. Stir in taco seasoning and water; bring to a simmer. Cook until sauce thickens, about 2-3 minutes. Remove from heat.
In a small saucepan, warm refried beans over medium heat, stirring occasionally.
Warm tortillas in a dry skillet or microwave until pliable.
To assemble: Spread about 1/4 cup refried beans down the center of each tortilla. Top with 1/4 of the beef mixture, 1/4 cup rice, 1/4 cup cheese, 1 tablespoon sour cream, and 1 tablespoon salsa. Add avocado slices if desired.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom, tucking in the sides as you go. Serve immediately.
Tips
For a lighter version, use ground turkey and reduced-fat cheese.
To make ahead, wrap burritos in foil and reheat in a 350°F oven for 15 minutes.
