Ingredients
1 lb ground beef (80/20)
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 slices pepper jack cheese
4 hamburger buns, split and toasted
1/2 cup mayonnaise
2 tbsp adobo sauce from chipotle peppers
1 lime, juiced
1/2 cup pickled jalapeño slices, drained
1 cup shredded lettuce
1 tomato, sliced
Instructions
In a large bowl, combine ground beef, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Mix gently until just combined; do not overwork. Divide into 4 equal portions and shape into patties, making a slight indentation in the center.
Preheat grill or grill pan to medium-high heat. Grill patties for 4-5 minutes per side, or until desired doneness. During the last minute of cooking, top each patty with a slice of pepper jack cheese and cover to melt.
While patties cook, prepare chipotle mayo: In a small bowl, whisk together mayonnaise, adobo sauce, and lime juice until smooth.
Toast buns on the grill or in a toaster until lightly golden.
Assemble burgers: Spread chipotle mayo on both halves of each bun. Place a patty on the bottom bun, then top with pickled jalapeños, lettuce, and tomato slices. Cover with top bun and serve immediately.
Tips
For extra heat, use fresh jalapeños instead of pickled.
Serve with sweet potato fries or a side of black beans.
Make patties ahead and refrigerate for up to 4 hours.
