Ingredients
8 oz spaghetti
2 tbsp unsalted butter
8 oz cremini mushrooms, sliced
1 small onion, finely chopped
2 cloves garlic, minced
3 tbsp all-purpose flour
2 cups chicken broth
1 cup heavy cream
1/2 cup dry white wine (optional)
1 cup grated Parmesan cheese, divided
2 cups cooked chicken, shredded or diced
1/2 cup frozen peas, thawed
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/4 cup breadcrumbs (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook spaghetti according to package directions until al dente. Drain and set aside.
In a large skillet, melt butter over medium heat. Add mushrooms and onion; cook until mushrooms are browned and onion is soft, about 5-7 minutes. Add garlic and cook 1 minute more.
Sprinkle flour over the mushroom mixture and stir constantly for 1-2 minutes until well combined.
Gradually whisk in chicken broth, heavy cream, and wine (if using). Bring to a simmer, stirring constantly, until sauce thickens, about 3-5 minutes.
Remove from heat. Stir in 3/4 cup Parmesan cheese until melted. Add chicken, peas, salt, pepper, and nutmeg. Mix well.
Combine the sauce with the cooked spaghetti. Transfer to the prepared baking dish. Sprinkle remaining 1/4 cup Parmesan cheese and breadcrumbs (if using) on top.
Bake for 20-25 minutes until bubbly and golden on top. Let rest 5 minutes before serving.
