Ingredients
1/2 cup soy sauce
1/4 cup mirin
2 tablespoons sake (or dry sherry)
2 tablespoons brown sugar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon cornstarch (optional, for thickening)
Instructions
In a small bowl, whisk together soy sauce, mirin, sake, brown sugar, ginger, and garlic until sugar is dissolved.
Use immediately as a marinade for proteins, or for a thicker sauce, transfer to a small saucepan, whisk in cornstarch, and simmer over medium heat until thickened, about 2 minutes.
Marinate meat or tofu for at least 30 minutes, up to overnight.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
For a gluten-free version, use tamari instead of soy sauce and ensure mirin is gluten-free.
