Ingredients
1 lb boneless skinless chicken thighs, cut into 1-inch pieces
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons sake
2 tablespoons sugar
1 teaspoon grated fresh ginger
1 clove garlic, minced
8 bamboo skewers, soaked in water for 30 minutes
1 tablespoon vegetable oil
Sliced green onions and sesame seeds for garnish
Instructions
In a small saucepan, combine soy sauce, mirin, sake, sugar, ginger, and garlic. Bring to a simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer for 5 minutes until slightly thickened. Remove from heat and let cool.
Brush chicken skewers with vegetable oil and season lightly with salt and pepper.
Grill skewers over medium-high heat (or broil on high) for 4-5 minutes per side, basting with teriyaki sauce during the last 2 minutes of each side, until chicken is cooked through and glazed.
Transfer to a platter, drizzle with remaining sauce, and garnish with green onions and sesame seeds.
Tips
For extra flavor, marinate chicken in half the teriyaki sauce for 30 minutes before skewering.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Serve with steamed rice and a side of pickled vegetables.
