Ingredients
1 lb boneless skinless chicken breasts
1/2 cup teriyaki sauce
6 cups mixed salad greens
1 cup shredded carrots
1 cup edamame, shelled and cooked
1 red bell pepper, thinly sliced
1/2 cup sliced almonds, toasted
1/4 cup sesame seeds, toasted
For the dressing: 3 tbsp rice vinegar
2 tbsp soy sauce
1 tbsp honey
1 tbsp sesame oil
1 tsp grated fresh ginger
Instructions
In a bowl, marinate chicken breasts in teriyaki sauce for at least 15 minutes.
Grill or pan-sear chicken over medium-high heat for 6-7 minutes per side until cooked through. Let rest 5 minutes, then slice thinly.
In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, and ginger to make the dressing.
