Ingredients
1 lb ground chicken
1/2 cup low-sodium soy sauce
1/4 cup mirin
2 tbsp brown sugar
1 tbsp grated fresh ginger
2 cloves garlic, minced
1 tsp sesame oil
1 tbsp cornstarch mixed with 2 tbsp water
1 head butter lettuce, leaves separated
1/4 cup sliced green onions
1 tbsp toasted sesame seeds
Instructions
In a small bowl, whisk together soy sauce, mirin, brown sugar, ginger, garlic, and sesame oil to make the teriyaki sauce.
Heat a large skillet over medium-high heat. Add ground chicken and cook, breaking it apart, until browned and cooked through, about 5-7 minutes.
Pour the teriyaki sauce over the cooked chicken. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and coats the chicken.
Remove from heat. Spoon the chicken mixture into lettuce cups. Garnish with green onions and sesame seeds. Serve immediately.
Tips
Use iceberg or romaine lettuce if butter lettuce is unavailable.
Leftover filling can be stored in the fridge for up to 3 days and reheated.
For extra crunch, add water chestnuts or shredded carrots to the filling.
