Ingredients
1 lb ground beef (80/20)
1/4 cup panko breadcrumbs
1 large egg
2 green onions, finely chopped
1 tsp grated fresh ginger
2 cloves garlic, minced
1/2 cup low-sodium soy sauce
1/4 cup mirin
2 tbsp brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
4 pineapple rings (fresh or canned)
4 hamburger buns
4 leaves lettuce
4 slices provolone or Swiss cheese (optional)
Instructions
Make teriyaki sauce: In a small saucepan, combine soy sauce, mirin, brown sugar, rice vinegar, and sesame oil. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer for 2-3 minutes until slightly thickened. Remove from heat and let cool.
In a large bowl, combine ground beef, panko, egg, green onions, ginger, garlic, and 2 tablespoons of the teriyaki sauce. Mix gently until just combined. Form into 4 patties, about 3/4-inch thick.
Preheat grill or grill pan to medium-high heat. Oil the grates. Grill patties for 4-5 minutes per side for medium, brushing with teriyaki sauce during the last minute of cooking. If using cheese, add a slice during the last minute.
While patties cook, grill pineapple rings for 2-3 minutes per side until grill marks appear.
Toast buns on the grill for about 1 minute. Assemble burgers: place lettuce on bottom bun, add patty, top with grilled pineapple, and drizzle with additional teriyaki sauce. Close bun and serve.
Tips
For best flavor, make the teriyaki sauce ahead of time and refrigerate.
Use 90/10 ground beef if you prefer leaner burgers, but add 1 tablespoon olive oil to the mixture.
Leftover teriyaki sauce can be stored in an airtight container in the refrigerator for up to 2 weeks.
