Ingredients
1 lb ground beef (80/20)
1/2 cup panko breadcrumbs
1 large egg
2 green onions, finely chopped
1 clove garlic, minced
1 tsp grated fresh ginger
1/2 tsp salt
1/4 tsp black pepper
1/2 cup teriyaki sauce (store-bought or homemade)
4 slices canned pineapple rings
4 hamburger buns
4 leaves lettuce
4 slices provolone or Swiss cheese
1/4 cup mayonnaise
1 tsp sriracha (optional)
Instructions
In a large bowl, combine ground beef, panko, egg, green onions, garlic, ginger, salt, and pepper. Mix gently until just combined. Divide into 4 equal portions and shape into patties, slightly larger than the buns.
Heat a grill or grill pan over medium-high heat. Brush grates with oil. Grill patties for 4-5 minutes per side, or until desired doneness. During the last 2 minutes, brush each patty with teriyaki sauce and top with a slice of cheese. Cover and let melt.
While burgers cook, grill pineapple rings for 2-3 minutes per side until lightly charred. Also toast buns cut-side down on the grill for about 1 minute.
In a small bowl, mix mayonnaise with sriracha if desired. Spread on the cut sides of the buns.
Assemble burgers: bottom bun, lettuce, patty with cheese, grilled pineapple, and top bun. Serve immediately.
Tips
For homemade teriyaki sauce: whisk together 1/4 cup soy sauce, 2 tbsp mirin, 2 tbsp sake (or dry sherry), 1 tbsp sugar, and 1 tsp grated ginger. Simmer until slightly thickened.
If using store-bought teriyaki sauce, look for one with a thicker consistency for better glazing.
Serve with a side of steamed edamame or a simple cucumber salad.
