Ingredients
1 lb flank steak, thinly sliced against the grain
2 tbsp cornstarch
2 tbsp vegetable oil, divided
1 red bell pepper, sliced
1 cup broccoli florets
2 carrots, julienned
3 green onions, sliced
1 tbsp sesame seeds, toasted
1/3 cup soy sauce
1/4 cup mirin
2 tbsp brown sugar
1 tbsp grated fresh ginger
2 cloves garlic, minced
Instructions
In a small bowl, whisk together soy sauce, mirin, brown sugar, ginger, and garlic to make the teriyaki sauce. Set aside.
Toss beef slices with cornstarch until coated.
Heat 1 tablespoon oil in a wok or large skillet over high heat. Add beef in a single layer and cook without stirring for 1 minute, then stir-fry until browned, about 2 minutes. Transfer to a plate.
Add remaining 1 tablespoon oil to the wok. Add bell pepper, broccoli, and carrots; stir-fry for 3-4 minutes until crisp-tender.
Return beef to the wok. Pour in teriyaki sauce and stir-fry for 1-2 minutes until sauce thickens and coats everything.
Garnish with green onions and sesame seeds. Serve immediately over steamed rice.
Tips
For tender beef, freeze the steak for 15 minutes before slicing thinly.
Substitute chicken or tofu for beef if desired.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
