Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (10.75 oz) condensed cream of mushroom soup
1 can (10.75 oz) condensed cream of chicken soup
1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (32 oz) package frozen tater tots
Instructions
Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is tender, about 8 minutes. Drain fat.
Add garlic and cook for 1 minute.
Stir in cream of mushroom soup, cream of chicken soup, frozen vegetables, milk, salt, and pepper. Cook until heated through, about 3 minutes.
Pour the beef mixture into a greased 9x13-inch baking dish.
Arrange frozen tater tots in a single layer on top of the beef mixture.
Bake for 35-40 minutes, until tater tots are golden and crispy and filling is bubbly.
Let stand for 5 minutes before serving.
Tips
For a lighter version, use lean ground turkey and reduced-fat soups.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
Add shredded cheddar cheese on top during the last 5 minutes of baking for extra flavor.
