- 1 lb taro root, peeled and cubed

- 1 can (13.5 oz) coconut milk
- 2 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice
- 2 tbsp chopped cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant, about 3 minutes.
- Add taro cubes and cook for 5 minutes, stirring occasionally.
- Pour in coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer until taro is tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth. Alternatively, let cool slightly and blend in batches in a blender.
- Stir in salt, pepper, and lime juice. Adjust seasoning to taste.
