A refreshing and tangy drink made from tamarind pulp, sweetened with sugar and spiced with a pinch of salt and cumin. Perfect for hot days.

Ingredients
1/2 cup tamarind pulp (from a block, or about 6-8 pods)
4 cups water
1/2 cup sugar, or to taste
1/4 teaspoon salt
1/4 teaspoon ground cumin (optional)
Instructions
If using tamarind pods, peel and remove strings. Place pulp in a bowl, add 1 cup warm water, and let soak for 10 minutes. Squeeze and mash to extract pulp. Strain through a fine mesh sieve into a pitcher, discarding seeds and fibers.
Add remaining 3 cups water, sugar, salt, and cumin (if using) to the pitcher. Stir until sugar dissolves.
Taste and adjust sweetness or tanginess by adding more sugar or a little lime juice if desired.
Chill in refrigerator for at least 1 hour. Serve over ice.
Tips
Can be stored in the refrigerator for up to 3 days.
For a spicier version, add a pinch of cayenne pepper.
