Ingredients
1/2 cup tahini (well-stirred)
1/2 cup cold water, plus more as needed
3 tablespoons fresh lemon juice
1 small garlic clove, minced
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil (optional)
Instructions
In a medium bowl, whisk together tahini, lemon juice, garlic, and salt. The mixture will thicken and become pale.
Gradually whisk in cold water, starting with 1/4 cup, until smooth and creamy. Add more water a tablespoon at a time until desired consistency is reached.
Taste and adjust seasoning with more lemon juice or salt as needed.
If using, stir in olive oil for extra richness. Serve immediately or refrigerate in an airtight container for up to 1 week.
Tips
For a thinner sauce, add more water; for a thicker dip, use less water.
Store in the refrigerator; stir before serving as it may separate.
