- 8 small corn tortillas
- 2 cups shredded Oaxaca cheese or mozzarella
- 1 tablespoon vegetable oil
- 1/2 cup salsa verde or roja
- 1/4 cup crema or sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Heat a large skillet or comal over medium-high heat. Lightly brush one side of each tortilla with vegetable oil.
- Place a tortilla oil-side down in the hot skillet. Sprinkle about 1/4 cup of shredded cheese evenly over the tortilla.
- Cook until the cheese is melted and the bottom is golden brown and crispy, about 2-3 minutes. Fold the tortilla in half to form a taco shape.
- Remove from skillet and repeat with remaining tortillas and cheese.
- Serve immediately with salsa, crema, cilantro, and lime wedges.
