Ingredients
1 lb ground beef
1 packet (1 oz) taco seasoning
1/2 cup water
1 can (15 oz) black beans, drained and rinsed
1 can (4 oz) diced green chiles
6 (8-inch) flour tortillas
2 cups shredded Mexican blend cheese
1 cup salsa
1/2 cup sour cream (for serving)
1/4 cup chopped fresh cilantro (for serving)
Instructions
Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
In a large skillet over medium-high heat, cook ground beef until browned, breaking it up as it cooks. Drain excess fat.
Add taco seasoning and water; stir and simmer for 5 minutes until thickened. Remove from heat and stir in black beans and green chiles.
Place one tortilla in the bottom of the prepared pie dish. Spread about 1/3 cup of the beef mixture over the tortilla, then sprinkle with about 1/3 cup cheese. Repeat layers with remaining tortillas, beef mixture, and cheese, ending with a tortilla on top. Press down gently.
Spread salsa over the top tortilla, then sprinkle with remaining cheese.
Bake for 20-25 minutes until hot and bubbly. Let rest for 5 minutes before slicing.
Serve with sour cream and cilantro.
Tips
For a spicier pie, use hot salsa or add a diced jalapeño to the beef mixture.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
You can substitute ground turkey or chicken for the beef.
