Ingredients
2 boneless skinless chicken breasts (about 6 oz each)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
1 cup cooked white rice
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1/2 cup canned black beans, drained and rinsed
1/2 cup frozen corn kernels, thawed
1/2 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup salsa
Instructions
Season chicken breasts with olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
Grill or pan-sear chicken over medium-high heat for 6-7 minutes per side, until cooked through (internal temp 165°F). Let rest 5 minutes, then dice.
In a small bowl, combine cooked rice, lime juice, and cilantro. Set aside.
In a small saucepan, heat black beans and corn over medium heat until warmed through.
Assemble bowls: divide cilantro-lime rice between two bowls. Top with black beans and corn, diced chicken, lettuce, tomatoes, cheese, sour cream, and salsa.
