Ingredients
2 T-bone steaks (about 1 inch thick, 16 oz each)
2 tablespoons vegetable oil
Salt and freshly ground black pepper to taste
4 tablespoons unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
1/2 teaspoon lemon zest
Instructions
Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature. Pat dry with paper towels.
In a small bowl, combine softened butter, minced garlic, parsley, thyme, and lemon zest. Mix well and set aside.
Season steaks generously on both sides with salt and pepper.
Heat a heavy skillet (cast iron preferred) over high heat until smoking. Add vegetable oil.
Carefully place steaks in skillet. Sear for 4 minutes without moving, then flip and sear for another 4 minutes for medium-rare (adjust time for desired doneness).
Reduce heat to low. Add garlic butter to the skillet and let it melt. Spoon butter over steaks for 1 minute.
Transfer steaks to a cutting board and let rest for 5 minutes. Serve with remaining garlic butter spooned on top.
Tips
Use a meat thermometer: 130°F for medium-rare, 140°F for medium.
Let steak rest before slicing to retain juices.
Store leftover garlic butter in the fridge for up to a week.
