Ingredients
1 large sweet potato (about 12 oz), sliced lengthwise into 1/4-inch planks
1 tablespoon olive oil
Salt and black pepper to taste
4 oz smoked salmon
4 oz cream cheese, softened
1 tablespoon capers, drained
1 tablespoon fresh dill, chopped (optional)
1/4 small red onion, thinly sliced (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Brush sweet potato slices on both sides with olive oil and season with salt and pepper. Arrange in a single layer on the baking sheet.
Roast for 20-25 minutes, flipping halfway, until tender and lightly browned. Let cool slightly.
Spread each sweet potato toast with cream cheese.
