Ingredients
2 large sweet potatoes (about 1.5 lbs)
2 tablespoons olive oil
1 tablespoon cornstarch
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel sweet potatoes and cut into 1/4-inch thick sticks. Place in a large bowl.
In a small bowl, whisk together cornstarch, paprika, garlic powder, salt, and pepper.
Drizzle olive oil over sweet potatoes and toss to coat. Sprinkle the spice mixture over and toss until evenly coated.
Arrange fries in a single layer on the prepared baking sheet, leaving space between each fry.
Bake for 15 minutes, then flip fries. Bake for another 10-15 minutes until golden brown and crispy.
Let cool for 2 minutes before serving.
