Ingredients
2 large sweet potatoes (about 1.5 lbs)
2 tablespoons olive oil
1 teaspoon cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup mayonnaise
1 clove garlic, minced
1 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1 tablespoon chopped fresh parsley (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel sweet potatoes and cut into 1/4-inch thick sticks, about 3 inches long.
In a large bowl, toss sweet potato sticks with olive oil, cornstarch, salt, pepper, and paprika until evenly coated.
Arrange fries in a single layer on the prepared baking sheet, not overcrowding.
Bake for 15 minutes, then flip fries and bake for another 10-15 minutes until golden and crispy.
While fries bake, make aioli: In a small bowl, combine mayonnaise, minced garlic, lemon juice, and Dijon mustard. Stir until smooth. Season with salt and pepper to taste. Stir in parsley if using.
Serve fries hot with aioli on the side for dipping.
Tips
For extra crispiness, soak cut sweet potatoes in cold water for 30 minutes, then pat dry before tossing with oil and cornstarch.
Aioli can be made up to 2 days ahead and refrigerated.
