2 large sweet potatoes (about 1.5 lbs total)

1 teaspoon cornstarch

Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Scrub sweet potatoes and cut off any blemishes. For fries, cut into 1/4-inch thick sticks. For wedges, cut in half lengthwise, then each half into 4-6 wedges.
Place cut sweet potatoes in a large bowl. Add olive oil, cornstarch, salt, pepper, paprika, and garlic powder. Toss until evenly coated.
Arrange sweet potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
