  3. Heat about 2 inches of vegetable oil in a wok or deep skillet to 350°F (175°C). Fry pork in batches until golden brown and cooked through, about 4-5 minutes per batch. Drain on paper towels.
  4. Carefully pour off all but 1 tablespoon of oil from the wok. Add bell peppers and onion; stir-fry over high heat for 2 minutes until slightly charred but still crisp.
  5. Add pineapple chunks and the sauce mixture. Bring to a simmer. Stir the cornstarch slurry, then add to the wok. Cook, stirring, until sauce thickens, about 1 minute.
  6. Return pork to the wok and toss to coat with sauce. Serve immediately over steamed rice.
