Ingredients
1 lb ground beef
1 packet taco seasoning
1 can (15 oz) refried beans
1 bag (13 oz) tortilla chips
2 cups shredded Mexican blend cheese
1 cup pico de gallo or diced tomatoes
1/2 cup sliced black olives
1/2 cup sour cream
1 avocado, diced
1/4 cup chopped fresh cilantro
1 jalapeño, sliced (optional)
Instructions
Preheat oven to 400°F (200°C).
In a skillet over medium heat, cook ground beef until browned; drain fat. Add taco seasoning and 1/4 cup water; simmer until thickened.
In a small saucepan, warm refried beans over low heat.
Spread tortilla chips on a large oven-safe platter or baking sheet. Dollop spoonfuls of refried beans over chips, then sprinkle with seasoned beef and shredded cheese.
Bake for 8-10 minutes until cheese is melted and bubbly.
Remove from oven and top with pico de gallo, olives, sour cream, avocado, cilantro, and jalapeño if using. Serve immediately.
Tips
For a vegetarian version, substitute beef with black beans or seasoned tofu.
