Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 3 minutes.
- Add sliced squash and zucchini; cook, stirring occasionally, until tender, about 5-7 minutes. Remove from heat.
- In a large bowl, combine cream of chicken soup, sour cream, shredded carrots, cheddar cheese, salt, and pepper. Stir in the cooked vegetables.
- Transfer mixture to the prepared baking dish. In a small bowl, mix crushed crackers and Parmesan cheese; sprinkle over the top.
