Ingredients
1 cup whole milk ricotta cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
1 cup frozen chopped spinach, thawed and squeezed dry
Instructions
Place the thawed spinach in a clean kitchen towel and squeeze out as much liquid as possible.
In a medium bowl, combine the ricotta, Parmesan, parsley, egg, salt, pepper, and nutmeg. Mix until well combined.
Add the squeezed spinach and stir until evenly distributed.
Use immediately to fill pasta, or cover and refrigerate for up to 2 days.
Tips
For a smoother filling, pulse the spinach in a food processor before adding.
If the filling seems too wet, add a tablespoon of breadcrumbs to absorb excess moisture.
