Ingredients
8 slices thick-cut brioche or challah bread
4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/2 cup fresh blueberries or sliced strawberries
3 large eggs
1/2 cup milk
1 tbsp granulated sugar
1/2 tsp ground cinnamon
2 tbsp unsalted butter, for frying
Maple syrup, for serving
Instructions
In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in berries.
Spread the cream cheese mixture evenly onto 4 slices of bread, leaving a small border. Top with remaining bread slices to form sandwiches.
In a shallow dish, whisk together eggs, milk, granulated sugar, and cinnamon until well combined.
Heat a large nonstick skillet or griddle over medium heat and add 1 tablespoon butter.
Dip each sandwich into the egg mixture, turning to coat both sides, letting excess drip off.
Place sandwiches in the skillet and cook until golden brown, about 2-3 minutes per side. Add remaining butter as needed.
Serve immediately with maple syrup.
Tips
Use day-old bread for best texture; it absorbs the custard without becoming soggy.
For a savory twist, omit the sugar and berries and fill with ham and cheese.
Keep cooked French toast warm in a 200°F oven while cooking remaining batches.
