1 lb fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 pint vanilla ice cream
1/2 cup heavy cream
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract
4 maraschino cherries (optional)
Chopped nuts (optional)
Instructions
In a medium saucepan, combine sliced strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries release their juices and sauce thickens slightly, about 8-10 minutes. Remove from heat and let cool to room temperature.
In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
To assemble, place a scoop of vanilla ice cream in each serving dish. Spoon the cooled strawberry sauce over the ice cream.
Top with a dollop of whipped cream and a maraschino cherry. Sprinkle with chopped nuts if desired. Serve immediately.
Tips
Strawberry sauce can be made ahead and refrigerated for up to 3 days; reheat slightly before serving.
For a richer sauce, mash some of the strawberries while cooking.
