Ingredients
1 pound fresh strawberries, hulled and halved
3/4 cup granulated sugar
1/2 cup water
2 tablespoons fresh lemon juice
1/8 teaspoon salt
Instructions
In a small saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat and let cool to room temperature.
In a blender, puree strawberries until smooth. Strain through a fine-mesh sieve into a bowl to remove seeds (optional, for smoother texture).
Stir in the cooled sugar syrup, lemon juice, and salt until well combined.
Cover and refrigerate the mixture until cold, at least 2 hours or overnight.
Pour the chilled mixture into an ice cream maker and churn according to manufacturer's instructions until thick and slushy.
Transfer to an airtight container and freeze for at least 2 hours until firm. Let sit at room temperature for 5 minutes before scooping.
Tips
For a smoother sorbet, strain the puree to remove seeds.
If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until firm.
