A homemade version of the classic toaster pastry, with a flaky crust and sweet strawberry filling.

Ingredients
2 cups all-purpose flour
1 tablespoon granulated sugar
1/2 teaspoon salt
1 cup cold unsalted butter, cubed
1/4 cup ice water
1 cup strawberry jam
1 tablespoon cornstarch
1 tablespoon lemon juice
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

Instructions
In a food processor, pulse flour, sugar, and salt. Add butter and pulse until pea-sized crumbs form. Add ice water and pulse until dough just comes together. Divide dough in half, flatten into discs, wrap in plastic, and refrigerate for 30 minutes.
In a small bowl, mix strawberry jam, cornstarch, and lemon juice. Set aside.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
On a floured surface, roll one dough disc into a 12x10-inch rectangle. Cut into 8 rectangles (about 3x5 inches each). Repeat with second disc.
Place half of the rectangles on the prepared baking sheet. Spoon about 1 tablespoon of filling onto the center of each, leaving a border. Top with remaining rectangles. Press edges to seal, then crimp with a fork. Poke tops with a fork to vent.
Bake for 18-20 minutes until golden brown. Let cool completely on a wire rack.
For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled pop-tarts and top with sprinkles if desired.
