Ingredients
2 cups fresh or frozen strawberries, hulled and halved
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup water
Instructions
In a medium saucepan, combine strawberries, sugar, lemon juice, and water.
Bring to a simmer over medium heat, stirring occasionally.
Reduce heat to low and cook for 8-10 minutes, until strawberries soften and release their juices.
Use a potato masher or fork to gently mash some of the strawberries to desired consistency.
Remove from heat and stir in vanilla extract.
Let cool slightly before serving. Compote will thicken as it cools.
