Ingredients
8 oz elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
2 cups shredded sharp cheddar cheese
Instructions
Cook macaroni according to package directions in a large pot of salted boiling water until al dente. Drain and set aside.
In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk, salt, pepper, and paprika. Continue whisking until mixture thickens, about 3-4 minutes.
Remove from heat and stir in shredded cheddar cheese until melted and smooth.
Add cooked macaroni back to the pot and stir until well coated. Serve immediately.
Tips
For a sharper flavor, use extra-sharp cheddar or add 1/4 cup grated Parmesan.
