Ingredients
8 oz dried lo mein noodles
2 tbsp vegetable oil
2 cloves garlic, minced
1 tsp grated fresh ginger
1/2 cup sliced shiitake mushrooms
1/2 cup julienned carrots
1/2 cup snow peas, trimmed
1/2 cup bean sprouts
3 green onions, sliced diagonally
3 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1/2 tsp sugar
1/4 tsp white pepper
Instructions
Cook lo mein noodles according to package directions until al dente. Drain and rinse under cold water. Toss with a little oil to prevent sticking.
In a small bowl, mix soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Set aside.
Heat vegetable oil in a wok or large skillet over high heat. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
Add mushrooms and carrots, stir-fry for 2 minutes. Add snow peas and bean sprouts, cook for 1 minute.
Add the cooked noodles and the sauce mixture. Toss everything together using tongs, stir-frying for 2-3 minutes until noodles are heated through and well coated.
Remove from heat, sprinkle with green onions, and serve immediately.
Tips
For a protein boost, add cooked chicken, shrimp, or tofu in step 4.
If you can't find lo mein noodles, substitute with thick spaghetti or udon noodles.
Adjust the amount of dark soy sauce for color preference.
