Ingredients
1 cup warm milk (110°F)
2 1/4 teaspoons active dry yeast (1 packet)
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon salt
4 cups all-purpose flour
1/2 cup unsalted butter, softened
1 cup packed brown sugar
2 tablespoons ground cinnamon
1/2 cup chopped pecans
1/2 cup unsalted butter

1/4 cup heavy cream
1/2 cup chopped pecans
Instructions
In a small bowl, combine warm milk, yeast, and 1 tablespoon of granulated sugar. Let stand 5-10 minutes until foamy.
In a large bowl, mix melted butter, remaining sugar, eggs, and salt. Add yeast mixture and 2 cups flour; beat until smooth. Stir in remaining flour to form a soft dough.
Turn dough onto a floured surface; knead 6-8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
For filling: mix softened butter, brown sugar, and cinnamon until smooth.
For caramel: In a small saucepan, combine 1/2 cup butter, 1 cup brown sugar, honey, and heavy cream. Bring to a boil over medium heat, stirring constantly. Remove from heat; stir in 1/2 cup pecans. Pour into a greased 9x13-inch baking dish.
Punch down dough. On a floured surface, roll into a 12x18-inch rectangle. Spread filling over dough. Roll up tightly from long side; pinch seam. Cut into 12 slices.
Place slices cut-side down over caramel in dish. Cover and let rise until doubled, about 30 minutes.
Preheat oven to 350°F. Bake buns 25-30 minutes until golden brown. Cool in pan 5 minutes, then invert onto serving plate.
Tips
For best results, use room temperature eggs and milk.
Buns can be assembled the night before: after placing in pan, cover and refrigerate. Let come to room temperature and rise before baking.
Store leftovers covered at room temperature for up to 2 days.
