Ingredients
1 cup basmati rice
2 cups water
1 tablespoon vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon chili powder (optional)
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
Salt to taste
Fresh cilantro for garnish
Instructions
Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes, then fluff with a fork.
While the rice cooks, heat oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in curry powder, cumin, coriander, turmeric, and chili powder (if using). Cook for 1 minute.
Add diced tomatoes (with their juices) and coconut milk. Stir well, bring to a simmer, and cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
Season with salt to taste.
Serve the curry over the steamed rice and garnish with fresh cilantro.
Tips
For a milder curry, reduce or omit the chili powder.
Leftover curry can be stored in the refrigerator for up to 3 days.
To make it vegan, ensure the curry powder is vegan-friendly (some contain dairy).
