Ingredients
12 live blue crabs
1 cup Old Bay seasoning
1 cup white vinegar
1 cup water
1 bottle (12 oz) beer (lager or ale)
1/2 cup kosher salt (optional, for extra flavor)
Instructions
In a large pot with a tight-fitting lid, combine the beer, water, and vinegar. Place a steaming rack or a layer of crumpled aluminum foil in the bottom to keep crabs above the liquid.
Bring the liquid to a boil over high heat. While waiting, rinse the live crabs under cold water to remove any debris.
Once boiling, carefully add a layer of crabs to the pot. Sprinkle generously with Old Bay seasoning (and salt if using). Repeat layering crabs and seasoning, ending with a thick layer of seasoning on top.
Cover the pot tightly and steam over high heat for about 20-25 minutes, or until the crabs turn bright red and the internal temperature reaches 180°F (82°C).
Remove the pot from heat and let the crabs rest, covered, for 5 minutes to absorb the seasoning.
Using tongs, transfer the steamed crabs to a large platter or newspaper-lined table. Serve immediately with additional Old Bay, melted butter, and vinegar on the side.
Tips
For best results, use live crabs that are active and heavy for their size.
Serve with crusty bread, corn on the cob, and cold beer.
Leftover steamed crab meat can be used in crab cakes or salads.
