Ingredients
8 oz flank or sirloin steak, thinly sliced
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp cumin
1/2 tsp chili powder
1/2 cup diced onion
1/2 cup diced bell pepper
4 large flour tortillas (8-inch)
1 1/2 cups shredded Monterey Jack or cheddar cheese
Sour cream and salsa for serving
Instructions
Season sliced steak with salt, pepper, cumin, and chili powder.
Heat olive oil in a skillet over medium-high heat. Cook steak strips for 2-3 minutes until browned. Remove and set aside.
In the same skillet, sauté onion and bell pepper until softened, about 2 minutes. Remove from heat.
Lay two tortillas on a flat surface. Divide half the cheese evenly over each tortilla. Top with steak, sautéed vegetables, and remaining cheese. Place remaining tortillas on top.
Heat a clean skillet or griddle over medium heat. Cook each quesadilla for 2-3 minutes per side, until golden brown and cheese is melted.
Cut into wedges and serve with sour cream and salsa.
Tips
For extra flavor, add a squeeze of lime juice to the cooked steak.
If you prefer a spicier kick, add sliced jalapeños with the vegetables.
These quesadillas can be assembled ahead and cooked just before serving.
