Ingredients
- 1 cup chickpea flour (besan)
- 1/4 cup finely chopped onion
- 2 tablespoons finely chopped fresh cilantro
- 1 teaspoon grated ginger
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin seeds
- Salt to taste
- 2 tablespoons oil, plus more for greasing
- 1/4 cup water
Instructions
- In a mixing bowl, combine chickpea flour, onion, cilantro, ginger, green chili, turmeric, red chili powder, cumin seeds, and salt.
- Add 2 tablespoons oil and mix well. Gradually add water to form a thick, smooth batter.
- Grease a steamer plate or a shallow dish with oil. Pour the batter into the dish and spread evenly.
- Steam for 15-20 minutes over medium heat until a knife inserted comes out clean.
- Allow to cool for 5 minutes, then cut into squares or diamond shapes.
- Heat a non-stick pan with a little oil and pan-fry the pieces on both sides until golden and crisp.
- Serve hot with chutney or ketchup.
Tips
- For extra flavor, add a pinch of asafoetida to the batter.
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a pan or microwave.
