Stamppot is a classic Dutch comfort food of mashed potatoes mixed with vegetables, often served with smoked sausage. This recipe features kale (boerenkool) for a traditional, hearty meal.

Ingredients
2 lbs potatoes, peeled and quartered
1 lb kale, stems removed and finely chopped
1 cup milk
4 tbsp unsalted butter
1 tsp salt
1/2 tsp black pepper
1/4 tsp ground nutmeg
4 smoked sausages (such as rookworst)
Instructions
Place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat and simmer until tender, about 20 minutes.
In the last 5 minutes of cooking, add the chopped kale to the pot. Cook until wilted and tender.
Drain the potatoes and kale well, then return to the pot. Add milk, butter, salt, pepper, and nutmeg. Mash until smooth and well combined.
While the potatoes cook, grill or pan-fry the smoked sausages over medium heat until heated through and lightly browned, about 8 minutes.
Serve the stamppot hot, topped with a smoked sausage and a pat of butter if desired.
Tips
For extra flavor, add a dollop of mustard or pickled onions on the side.
Leftover stamppot can be pan-fried the next day as a crispy potato cake.
Substitute kale with other hearty greens like spinach or endive for variation.
