Ssam is a Korean dish of lettuce wraps filled with rice, meat, and ssamjang. This recipe provides a classic version with pork belly and a homemade dipping sauce.

Ingredients
1 pound pork belly, sliced into 1/4-inch thick pieces
1 tablespoon gochujang (Korean chili paste)
2 tablespoons doenjang (Korean soybean paste)
1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon sesame oil
2 cloves garlic, minced
1 green onion, finely chopped
1 tablespoon toasted sesame seeds
1 head red leaf lettuce, leaves separated and washed
2 cups cooked short-grain rice
4 cloves garlic, sliced
4 green chili peppers, sliced (optional)
Instructions
In a small bowl, mix gochujang, doenjang, rice vinegar, honey, sesame oil, minced garlic, green onion, and sesame seeds to make ssamjang. Set aside.
Grill or pan-fry pork belly slices over medium-high heat until golden and crispy on both sides, about 3-4 minutes per side. Drain on paper towels.
To serve, place a lettuce leaf on your palm. Add a spoonful of rice, a piece of pork belly, a slice of garlic, and a slice of chili pepper if desired.
Top with a small amount of ssamjang. Wrap the lettuce around the filling and eat in one bite.
Tips
For extra flavor, marinate pork belly in soy sauce, garlic, and ginger for 30 minutes before cooking.
Ssam is traditionally eaten with your hands; provide napkins.
Leftover ssamjang can be stored in the refrigerator for up to a week.
