Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
4 large egg yolks
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
1/2 cup pistachios, chopped
1/2 cup maraschino cherries, chopped
1/4 cup dark chocolate chips
Green food coloring (optional)
Instructions
In a medium saucepan, heat cream and milk over medium heat until just simmering. Do not boil.
In a bowl, whisk egg yolks and sugar until pale and thick. Slowly pour hot cream mixture into yolks while whisking constantly.
Return mixture to saucepan and cook over low heat, stirring constantly, until custard thickens and coats the back of a spoon (170°F). Remove from heat and stir in vanilla. Strain through a fine-mesh sieve into a bowl. Cool to room temperature, then refrigerate until cold, about 2 hours.
Divide custard into three equal portions (about 1 cup each). To one portion, whisk in cocoa powder until smooth. To another, stir in pistachios and a drop of green food coloring if desired. To the third, stir in chopped cherries and chocolate chips.
Line a 9x5-inch loaf pan with plastic wrap, leaving overhang. Spread chocolate custard evenly in the bottom. Freeze until firm, about 1 hour.
Spread pistachio custard over chocolate layer. Freeze until firm, about 1 hour.
Spread cherry custard over pistachio layer. Cover with plastic wrap and freeze until completely firm, at least 6 hours or overnight.
To serve, lift spumoni out using plastic wrap, slice, and enjoy.
Tips
For easier slicing, dip knife in hot water between cuts.
Store leftover spumoni wrapped in plastic in the freezer for up to 2 weeks.
