Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup pistachio paste (or finely ground pistachios)
1/2 cup chopped candied cherries
1/4 cup chopped mixed candied fruit (citron, orange peel)
1/2 teaspoon almond extract
Green food coloring (optional)
Red food coloring (optional)
Instructions
In a large bowl, whisk together heavy cream, milk, sugar, vanilla, and salt until sugar dissolves. Divide mixture into three equal portions in separate bowls.
To the first portion, whisk in cocoa powder until smooth. Cover and refrigerate.
To the second portion, whisk in pistachio paste and almond extract. Add a drop of green food coloring if desired. Cover and refrigerate.
To the third portion, stir in chopped candied cherries and mixed candied fruit. Add a drop of red food coloring if desired. Cover and refrigerate all mixtures for at least 2 hours or overnight.
Churn each mixture separately in an ice cream maker according to manufacturer's instructions. Transfer each churned flavor to separate containers and freeze until firm, about 4 hours.
To assemble, line a loaf pan with plastic wrap. Spread the chocolate ice cream evenly in the bottom. Top with pistachio ice cream, then cherry ice cream. Press down gently. Cover and freeze until firm, at least 4 hours or overnight.
To serve, invert pan onto a platter, remove plastic wrap, and slice.
