Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup cold unsalted butter, cubed
1 cup shredded sharp cheddar cheese
1/2 cup finely chopped spring onions (green parts only)
3/4 cup cold buttermilk
1 large egg, beaten (for glaze)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Stir in cheddar cheese and spring onions. Make a well in the center and pour in buttermilk. Stir until just combined; do not overmix.
Turn dough onto a lightly floured surface and gently knead 2-3 times. Pat into a 3/4-inch thick round. Cut into 8 wedges or use a biscuit cutter.
Place scones on prepared baking sheet, spacing about 2 inches apart. Brush tops with beaten egg.
Bake for 12-15 minutes until golden brown. Transfer to a wire rack to cool slightly. Serve warm.
Tips
For extra cheesy flavor, add an additional 1/4 cup cheddar on top before baking.
