Ingredients
2 cups fresh basil leaves
1/2 cup extra-virgin olive oil
1/3 cup pine nuts
2 cloves garlic, peeled
1 tablespoon spirulina powder
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Toast pine nuts in a dry skillet over medium heat until golden, about 3 minutes, shaking frequently. Let cool.
In a food processor, combine basil, olive oil, toasted pine nuts, garlic, spirulina powder, Parmesan, salt, and pepper. Pulse until smooth, scraping down sides as needed.
Taste and adjust seasoning. Transfer to a jar or bowl. Use immediately or store in refrigerator.
Tips
Store in an airtight container in the fridge for up to 1 week, or freeze in ice cube trays for longer storage.
To keep pesto bright green, blanch basil leaves in boiling water for 10 seconds, then plunge into ice water before processing.
Substitute pine nuts with walnuts or almonds for a different flavor.
