Ingredients
12 oz (340g) dried spaghetti or fettuccine
2 tablespoons spirulina powder
3 tablespoons olive oil
3 cloves garlic, minced
1/4 cup pine nuts
1/4 cup grated Parmesan cheese (optional)
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Instructions
Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining.
While pasta cooks, in a small bowl, whisk spirulina powder with 2 tablespoons of the reserved pasta water until smooth to form a paste.
Heat olive oil in a large skillet over medium heat. Add garlic and pine nuts, cook until garlic is fragrant and pine nuts are lightly golden, about 2 minutes.
Reduce heat to low. Add the spirulina paste to the skillet and stir well to combine. Cook for 1 minute, stirring constantly.
Add the drained pasta to the skillet. Toss to coat, adding more reserved pasta water as needed to create a light sauce that coats the pasta. Season with salt and pepper.
Sprinkle with Parmesan cheese if using, and garnish with fresh parsley. Serve immediately.
Tips
Use fresh spirulina powder for the best color and flavor; avoid capsules.
Adjust the amount of spirulina to your taste; start with 1 tablespoon if you prefer a milder flavor.
Store leftover pasta in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of water.
