Ingredients
10 oz fresh spinach
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 large egg
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon nutmeg
Instructions
Bring a large pot of salted water to a boil. Add spinach and cook until wilted, about 1 minute. Drain and rinse with cold water. Squeeze out excess moisture and chop finely.
In a medium bowl, combine chopped spinach, ricotta, Parmesan, egg, garlic, salt, pepper, and nutmeg. Mix until well combined.
Use immediately to fill ravioli, or refrigerate in an airtight container for up to 2 days.
Tips
For best texture, squeeze as much water from the spinach as possible.
If using frozen spinach, thaw and squeeze dry; use about 1/2 of a 10 oz package.
Filling can be frozen in a sealed bag for up to 1 month; thaw overnight in fridge before using.
