  2. Heat olive oil in a skillet over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook 1 minute. Add spinach, salt, pepper, and nutmeg. Cook 2 minutes, then remove from heat.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in milk, bring to a simmer, and cook until thickened, about 5 minutes. Remove from heat and stir in 1/2 cup Parmesan cheese.
  4. Spread a thin layer of béchamel sauce on the bottom of a 9x13-inch baking dish.
  5. Layer 3 lasagna noodles (if using no-boil, do not pre-cook; if regular, cook according to package directions until al dente).
  6. Spread half of the spinach mixture over noodles, then dollop half of the ricotta cheese. Sprinkle with 1/2 cup mozzarella and 2 tablespoons Parmesan. Repeat layers: noodles, remaining spinach, remaining ricotta, 1/2 cup mozzarella, 2 tablespoons Parmesan.
  7. Top with remaining 3 noodles, then pour remaining béchamel sauce over top. Sprinkle with remaining mozzarella and Parmesan.
  8. Cover with foil and bake 30 minutes. Remove foil and bake 15-20 minutes more until bubbly and golden. Let rest 10 minutes before serving.
